In Sicily, between the end of September and the beginning of October, the long-awaited moment of the annual olive harvest arrives.
For Olixir® , we choose to harvest the olives at an early stage , when they are still very green, in order to offer you an organic extra virgin olive oil, with a balanced, green and fruity taste, and a high content of polyphenols , powerful cardioprotective antioxidants.
The harvest takes place over a month , and every day the olives are transported to the mill and cold pressed within a maximum of 12 hours after harvest , thus preserving all the benefits of their freshness .
Since olives are harvested only once a year , we are committed to ensuring that the Olixir® olive oil available is always the freshest possible , from the latest harvest. Because whether for taste or health, olive oil is always better when it is fresh .
Conversely, industrial oils , which are less expensive, are very often a mixture of medium quality oils, from different harvests (the wholesale price of oils from previous years being much lower than that of fresh oil, from the latest harvest).
